Carrot-Ginger Salba Muffins (GF)
Description
These zesty muffins are one of our favorite Gluten-Free recipes. They are a moist and delicious morning treat, extremely high in fiber, and the whole family will love them.
Makes 48 mini-muffins or 18 large muffins.
Ingredients
1 cup brown rice flour
3 cups grated carrots
3/4 cup soy flour
1 1/2 cups sugar
1/4 cup Salba Ground Seed
1 cup canola oil
1 tsp Gluten-Free soda
4 eggs, beaten
2 tsp Gluten-Free baking powder
1/2 cup unsweetened apple sauce
1 inch fresh grated ginger or 1 tbsp grated ginger
1 tbsp grated orange rind
1/2 cup raisins (optional)
1/4 teaspoon of salt
Cooking Instructions
Preheat oven to 325 degrees.
Mix dry ingredients together in a large bowl.
Add carrot mixture to dry ingredients. Be careful to not over-mix.
Bake for 30-40 minutes.
