Salba Bean Salad (Vegetarian)

Beans are called a "super food" for good reason. Everyone knows they are an excellent source of protein and fiber, but did you know they are also a good source of thiamin, iron, folate and potassium? Studies note beans are also a great source of antioxidants; the darker a bean's color, the more antioxidants they have. Makes 1 bowl.
Ingredients
1/4 cup Salba Seed Oil (or olive oil)
1 tsp ground cumin
1 (15-oz) can black beans, drained and rinsed
1 (15-oz) can black-eyed peas, drained and rinsed
1/2 cup chopped red onion (optional)
1 1/2 cups shelled edamame (8 oz)
2 cups fresh green beans
Zest and juice from 1 lime
1/2 cup chopped fresh cilantro
2 cloves finely chopped garlic
1 1/2 tsp salt
1/4 tsp black pepper
4 Tbsp Salba Whole Seeds
Cooking Instructions
Heat Salba Seed Oil in a small heavy skillet over moderately low heat until hot but not smoking.
Add the cumin, stirring, until fragrant, about 30 seconds.
Pour into a large heatproof bowl. Add edamame and remaining ingredients to cumin oil and mix well.
Let stand 10 minutes for the flavors to blend.
